Individual quiches with a wild garlic that delighted our taste buds. I was lucky to be able to gather some wild garlic near the house.

Finely chop the onion. Sauté it gently in a pan with olive oil. Wash and then dry the wild garlic leaves. Cut them roughly with scissors and then add them to the pan with the onions, adding a little salt. Mix and sauté for about 5 minutes. Set aside and let cool slightly.
Grate the cheese. Beat the eggs, add the soy milk. Then add the grated cheese and the sautéed wild garlic. Mix well.
Using a 13 cm round cutter, cut out 6 tart bases. Line the large tart pans or others and prick the bottoms with a fork. Pour a little of the mixture into each quiche.
Finally, bake for about 40 minutes in a preheated oven at 180°C. Serve warm or cold with a green salad.
