Soak the lentils if necessary. Cut the carrots and onions into small cubes. In a large pot, sauté the carrots in oil for 5 minutes. Add the onions. Cook for another 5 minutes. Add the spices. Sauté for one minute.
Pour the lentils and rice into the pot, making sure to adjust the cooking times. If the lentils take longer to cook, add them first, then the rice, ensuring that both cooking times end at the same time. Cover with water to the appropriate level.
To finish, let it cook for the necessary time while monitoring and adding water during cooking. At the end, remove some water if necessary (there should be a little left, but not too much), add the cornstarch and adjust the seasoning, particularly salt. Serve topped with chives. Also very good cold the next day.
