Prepare the vegetables. Peel the carrots, potatoes, leek, turnip, and onion. Cut them into large pieces. Stick the cloves into the onion. Chop the garlic.
Cooking the broth In a large pot, heat the olive oil. Add all the vegetables, garlic, onion, and herb bouquet. Sauté for 5 minutes.
Add the broth. Pour the vegetable broth into the pot. Bring to a boil, then lower the heat and let simmer covered for 1 hour. Check the doneness of the vegetables with the tip of a knife.
Seasoning Remove the herb bouquet, salt and pepper to taste. Serve hot with bread or rice as an accompaniment.
