Slice the onion and sauté it in a pan with a drizzle of oil over low heat for 3 minutes. Increase the heat, add the halved mushrooms, season with salt, and let them brown for 5 minutes.
Beat the eggs, add grated cheese, half of the blue cheese, salt, pepper, roughly chopped spinach, onions, and mushrooms. Gently mix.
Butter the bottom and sides of a cake pan. Pour in the mixture, sprinkle the remaining cheese cut into cubes on top, and bake the frittata in the oven at 200°C for 25 minutes.
To finish, a little extra: The frittata can be eaten hot or cold, sliced with a salad. Following the same principle, vary the vegetables and cheeses according to the season.
