Vegan Hungarian goulash recipe with beans and smoked tofu

Goulash is a comforting dish from Hungary. Traditionally made with meat, here is its vegan version with smoked tofu and paprika from its country of origin for a wonderfully warm meal.

Ingredients
 150 White bean or mixture of dry beans
 1 Onion
 2 Carrot
 2 Sweet potato
 200 Smoked tofu
 2 Sweet paprika
 1 Sweet smoked paprika
 2 Tomato concentrate
 500 Vegetable broth
 2 Fresh thyme
 Salt
 Pepper
 Olive oil

The night before, soak the dry beans in water. Let them soak all day and overnight.

Rinse the beans and cook them in a pot of boiling water with a pinch of salt for at least 1 hour. Slice the onion and peel the vegetables. Cut the carrots, sweet potato, and tofu into cubes.

Sauté the onion in a large pot with olive oil. Add the vegetables and thyme. Sauté for a few moments. Add the two types of paprika and the smoked tofu.

Next, dilute the tomato concentrate with the vegetable broth. Add the just-cooked and drained beans along with the rest of the ingredients. Pour in the broth before covering and letting it simmer for 30 minutes.

To finish, remove the lid and let simmer over medium heat for 10 minutes. Taste and adjust the seasoning with salt and pepper.
