First, coat your pieces of veal with flour. Brown them on all sides in a pressure cooker with butter and a bit of oil. Remove your pieces.
Next, peel and slice the carrots into rounds.
Slice the onions and chop the garlic. Add them to the pot with oil, then the tomato sauce and white wine. Season with salt and pepper, and add the bouquet garni. Sauté everything for 10 minutes.
Then, add the already browned pieces of shank. Cover and let simmer for 1 hour. If there is a little liquid missing at the end of cooking, you can add some broth or white wine.
For the accompaniment, cook your pasta simultaneously.
To finish, for the plating, place your piece of veal in the center of the plate. Surround it with your pasta and place a few basil leaves on top. And there you have it, your veal Osso Buco is ready to be enjoyed!
