 2 Pink grapefruits from Florida
 1 White grapefruit from Florida
 10 Water
 Zest of pink grapefruit
 230 Powdered sugar
 130 Flour
 100 Almond powder
 20 Poppy seeds
 1 Baking powder
 ½ Baking soda
 1 pinch Salt
 3 Egg
 250 Greek yogurt
 60 Sunflower oil
 60 Icing sugar
 35 Heavy cream
 1 clove Vanilla

Start by preheating your oven to 180°C. In the meantime, peel and slice a pink grapefruit and a white grapefruit.

Squeeze the juice of half a pink grapefruit and set aside.

Grease a 25 cm diameter cake pan. Cut a circle from parchment paper the size of the pan and place it at the bottom.

In a saucepan, melt 60 g of sugar with water until you obtain a very light caramel. Pour it into the bottom of the mold.

Alternately arrange the slices of pink and white grapefruit, then fill in the gaps with smaller pieces.

In a large mixing bowl, combine the remaining sugar, flour, almond flour, poppy seeds, baking powder, baking soda, and salt.

Make a well in the center of your mixing bowl and add the eggs, zest, yogurt, grapefruit juice, and oil. Mix until you obtain a smooth batter and then pour it into the cake pan.

Bake everything for a duration of 50 minutes. If the cake browns too much, cover it with aluminum foil halfway through cooking. Let it cool before unmolding.

During the baking of the cake, place the cream in a container to make whipped cream in the freezer.

To finish, while the cake cools, whip the cream and then gently sprinkle with powdered sugar. Finally, scrape the seeds from the vanilla pod and mix them into the cream. Set it aside in the fridge.
