Traditional porchetta is a culinary specialty from Italy made from pork. The pork is stuffed and roasted in the oven.

Porchetta
 15 Pork loin
 5 Fresh sage
 3 Fresh rosemary
 5 Fresh parsley
 2 cloves Garlic
 2 Lemon
 35 Olive oil
 Salt
Green sauce
 40 Fresh parsley
 40 Fresh mint
 1 clove Garlic
 10 dashes Anchovies
 2 Capers
 150 Olive oil
 20 Mustard
 30 Red wine vinegar
 1 Lemon
 30 Parmesan

Preheat the oven to 200 °C.

Prepare the salsa verde: blend parsley, mint, garlic, anchovy fillets, capers, olive oil, mustard, red wine vinegar, lemon juice, and parmesan in a food processor.

Spread the salsa verde over the pork loin. Roll it up and tie it like a roast.

Place the meat in an oven-safe dish. Brush with olive oil. Add the herbs (sage, rosemary, parsley), crushed garlic, lemon zest, and salt.

To finish, place in the oven for 30 minutes. Reduce the temperature to 160 °C and cook for another 2 hours and 30 minutes. Turn the meat regularly during cooking and baste with sauce.
