I'm sharing my foolproof recipe for a savory onion tart. This grandmother-style tart is a must-have in summer, perfect for a picnic or a meal with friends or family. It is very quick and easy to prepare and can also be made with tomatoes and without anchovies.
Preparation of the onions. Slice the onions. Sauté and brown in a pan with olive oil, season with salt and pepper. Let cool.
Preparation of the dough In a bowl: mix the flour and the yeast (sift if possible). Make a well, add the glass of water and the glass of oil. Beat the egg and incorporate it into the mixture. Mix until you obtain a smooth dough.
Assembly Preheat the oven to 250°C or gas mark 7 (10 minutes). In a pie dish, spread the pastry. Prick the pastry with a fork. A little tip: drizzle some olive oil once the pastry is pricked, spread the lightly caramelized onions on the pastry. Add the olives and anchovies.
Cook for 20 minutes in the oven.
