Yields4 ServingsPrep Time15 mins

The Périgord salad is a specialty from the southwest region, both elegant and rustic. A salad that I make when the beautiful days start to arrive. Quick, easy, and friendly! This traditional recipe highlights key products from the region, such as gizzards and duck breast. Perfect for a summer meal, it combines the freshness of vegetables with the richness of local ingredients. Its simple preparation even allows amateur cooks to create a dish worthy of a gourmet restaurant. Let yourself be seduced by this delicious salad.

Ingredients
 1 Crouton
 Cherry tomato
1 Smoked and sliced duck breast
 1 Confit duck gizzard
 Oil
 Vinegar
 Salt
 Pepper
Directions
1

Prepare a dressing in a mixing bowl and add the croutons so that they soak up the flavor and become softer.

2

Slice the gizzards and heat them slightly according to the instructions. Wash the cherry tomatoes and cut them in half.

3

To finish, add the salad to the bowl and begin to toss it. Then add the slightly warm gizzards, the sliced duck breast, and the cherry tomatoes. It's ready!
