Here is the easy traditional recipe for the famous cake, a very indulgent specialty that is easy to prepare and will delight everyone's taste buds!

Ingredients
 250 Flour
 125 Water
 10 Baker's yeast
 2 pinches Salt
 50 Butter
 190 Ghee
 150 Sugar

Mix the water, yeast, flour, and salt in the bowl of a mixer fitted with a kneading hook.

When the mixture is well combined, add the 50 g of melted butter. Knead for 5 minutes.

Place the dough on a floured work surface, knead it a little, then form it into a ball. Transfer it to a bowl, cover with plastic wrap, and let it rest in the fridge for 20 minutes.

Take the dough out of the fridge and score a cross on the top of the dough.

Open the dough at the incisions to form a cross. Roll out each point of dough to create a cross, making sure to keep a surplus of dough in the center. Prepare the butter by shaping it into a square, the same size as the center of the dough. (It is also possible to make the recipe with regular salted butter). Place the butter in the center of the dough.

Seal the edges of the cross over the butter. Make the first turn by rolling out the dough to a length of 50 cm and a thickness of 6 mm. Fold one third of the dough toward the center, then the other third, to create 3 layers of dough. Place the dough in the refrigerator for 20 minutes.

For the second fold, spread the sugar on the work surface. Place the dough on top and roll out again to a length of 50 cm. The sugar will penetrate the dough. Gather any excess sugar and sprinkle it on the surface of the dough. Fold one third inward again, then the other third, and make one final fold in the same manner.

Roll out the dough one last time to about 50 cm in length, 35 cm in width, and 3 mm in thickness. Sprinkle a final layer of sugar if you have any left. Roll the dough tightly along the width to form a log. Cut into 8 small pieces.

Place the pastries in a baking mold and then bake for 20 minutes at 190°C.

To finish, remove from the oven and wait a few minutes, then unmold using a knife.
