A recipe for sweet potato fries and a cheese-flavored mayonnaise. Combine the sweetness of sweet potato fries with the character of the cheese through a homemade mayonnaise that everyone will want the recipe for!
Preheat the oven to 180°C. Line the baking sheet with parchment paper.
Cut the sweet potatoes into fries. Spread them on the baking sheet without touching each other. Drizzle with olive oil. Bake for 30 to 40 minutes.
In the meantime, prepare the mayonnaise. Place the mustard, egg yolk, and salt in a pitcher. Create the emulsion using an immersion blender and add the vegetable oil in a stream. Once the mayonnaise has thickened, add the diced cheese and blend for a few more seconds. Place the mayonnaise in a container.
As soon as they come out of the oven, sprinkle the sweet potato fries with salt and smoked paprika.
To finish, serve them directly with mayonnaise.
