Preheat the oven to 180 °C (350 °F).
Rinse the quinoa and cook it in a pot of boiling salted water for 15 minutes, then drain it.
Wash the peppers, cut them in half, and hollow them out. Wash the zucchinis and cut them into cubes. Peel and finely chop the garlic and the onion. Wash and chop the parsley.
Mix the quinoa with the zucchini, garlic, onion, parsley, and spices. Season.
Fill the peppers with this stuffing, drizzle with olive oil, and bake for 30 minutes.
