The recipe for stuffed peppers is rich in vitamins A, C, and E. Even more interesting: these ripe peppers become sweet when cooked. They pair perfectly with seasoned beef.

Sautéed spinach and mushrooms
 2 Olive oil
 60 Coarsely chopped spinach
 4 Button mushrooms, sliced
 Salt, to your taste.
 Black pepper, to your taste
Stuffed mini peppers
 2 Panko breadcrumbs
 1 Milk
 85 Ground beef
 5 Small onion (about 75 g), finely chopped
 1 Flour type 45, plus for dusting.
 1 Soy sauce
 Salt, to your taste.
 Black pepper, to your liking.
 Mini peppers, cut in half, without seeds or stems.
 Vegetable oil

Preparation of the sautéed spinach and mushrooms: Heat the olive oil in a small skillet.

Add the spinach and mushrooms, and sauté them until they are tender.

Season with salt and pepper to your liking.

Preparation of stuffed mini peppers: Mix the panko and milk in a bowl and let soak for a few minutes.

Add the beef, the onion, the tablespoon of flour, and the soy sauce. Season with salt and pepper, and knead the mixture well.

Sprinkle the inside of the peppers with flour.

Heat the oil in a non-stick skillet over medium-high heat and sauté the stuffed mini peppers until golden brown on both sides.
