Roll out the dough into a rectangle (40-30 cm). Prepare the apples by removing the cores and seeds. Cut them into quarters and slice them (using a food processor). Coarsely crush the walnut halves.
Sprinkle 1 tablespoon of breadcrumbs over a strip 15 cm wide, leaving 5 cm of dough at the top and 3 cm on each side.
Spread the apples, sugar, cinnamon, raisins, and nuts in several layers on this strip. Cover everything with the remaining breadcrumbs.
Fold the top part of the dough over the mixture, then fold the sides like a wallet, sealing with a little water.
Seal everything with the bottom part, sealing the edges. Brush the strudel with an egg yolk.
Finally, bake at 165°C for about 45 minutes.
