Here is the easiest recipe to make a super strawberry cake for a nice spring dessert. Very light, this flavorful sponge cake is made without butter or flour.

Ingredients
 4 Egg
 200 Sugar (or aspartame)
 70 Potato starch
 1 Lemon (its zest)
 500 Cream with 30% fat content
 600 Strawberry

Prepare the sponge cake: beat the eggs with 75 g of sugar. Add the starch, almonds, and lemon zest. Whip the egg whites with 75 g of sugar. Gently fold the egg whites into the previous mixture. Pour everything into a 21 cm round cake pan and bake for 30-35 minutes at 150°C.

Let the cake cool. Cut it in half lengthwise. Prepare the whipped cream by mixing the remaining sugar, the stabilizer packets, and the fresh cream.

Line the inside of the cake with some whipped cream and slices of strawberry. Replace the top and cover with the remaining whipped cream. Decorate with a few reserved strawberries.

To finish, you can replace the whipped cream inside the cake with vanilla pudding. This prevents the cake from being too cloying.
