    Disappointing recipe for my first charlotte. The proportions are not right (too many strawberries and not enough cream), the cream doesn’t hold at all (it collapsed when unmolding) and doesn't have the typical flavor of a charlotte's cream: it lacks that characteristic taste of fresh cheese. It's strange to use cornstarch instead of gelatin or agar-agar for thickening. It's also surprising not to alternate layers of biscuits, cream, and strawberries, but only strawberries and cream... the idea of boiling the mint leaves with the cream is good, as you can really taste the mint in the cream... but overall, this recipe is disappointing.
