Spinach and Leek Quiche Recipe

Today I’m sharing a delicious vegetarian quiche, made with leeks and spinach, nicely flavored with spices. It's really easy to prepare and packed with vitamins. Served with a bit of green salad, it’s perfect for a light meal. I served it for dinner. It can also be taken in a lunch box or for a picnic.

 2 Olive oil
 500 Freshly cut leeks
 2 cloves Garlic
 1 Ginger
 300 Frozen chopped spinach
 1 Curry
 1 Turmeric pepper mix
 ½ Salt

 300 thick sour cream
 4 Egg
 ½ Salt
 ¼ Pepper
 Grated nutmeg

Prepare the filling. Heat a large skillet with olive oil. Add the sliced leeks and cook for 5 minutes, stirring often.

Add the chopped garlic and ginger and cook for another minute.

Add the chopped spinach (there's no need to thaw them beforehand), the curry, the turmeric-pepper mix, and the salt. Continue cooking for another 3-4 minutes, stirring regularly. Remove from heat and let cool slightly.

Preheat the oven to 200°C, static heat.

Prepare the mixture. In a bowl, mix the cream well with the eggs, salt, pepper, and grated nutmeg. Add the grated cheese and mix again to incorporate it.

Roll out the puff pastry and line the tart pan, keeping the parchment paper.

Spread the filling over the tart crust.

Pour over the mixture.

Bake and cook for 35-40 minutes or until the quiche is well browned.

To finish, serve warm or cold, as it is or accompanied by a little green salad.
