A pizza with a bit more kick thanks to the spicy sauce and hot salami! Pecorino is a sheep's milk cheese with an intense and slightly spicy flavor...
For the arrabbiata sauce: peel and finely chop the cloves of garlic. Finely chop the peppers, removing the seeds.
Sauté the minced garlic in a small saucepan with a bit of olive oil. Add 3/4 of the peppers and the diced tomatoes. Season with salt and pepper, mix, and let simmer uncovered for about 1/2 hour to allow the sauce to thicken.
In the meantime, slice the spicy salami. Drain the olives, cut the mozzarella into pieces, rinse the parsley and chop it finely. Then, shave the pecorino.
Spread arrabbiata sauce over the pizza dough. Add mozzarella, spicy salami, olives, and the remaining peppers. Sprinkle with oregano and add shavings of pecorino.
Finally, bake at 200°C for about 15 minutes (depending on your oven type). Sprinkle with parsley and serve immediately.
