In Greek, "saganaki" is the name of the container in which this dish is prepared, a pan with two handles. This recipe is made with fried cheese (often halloumi or feta), shrimp, tomatoes, and ouzo. A delight!
Peel and chop the onion and garlic. Wash and chop the parsley. Sauté the onion and garlic in a pan with a drizzle of oil for 3 minutes. Add the shrimp and continue cooking for 2 minutes. Season with salt, pepper, and stir in the paprika.
Pour the ouzo, mix. Add the crushed tomatoes, fennel seeds, and half of the parsley. Let simmer for 10 minutes. If you do not have the specific dish, do not change the dish; pour the mixture into a baking dish. Sprinkle with crumbled feta and brown for a few minutes under the broiler.
Serve hot, sprinkled with the remaining parsley and oregano, accompanied by basmati rice.
