It's a race against time... With Ramadan coming, everything needs to be prepared in advance. Discover the few little "chhiwates," meaning the sweet and savory delights that will be part of my Ramadan table. Here, the pastries, very soft and flavorful filled with shrimp and vegetables... Be sure to try them! Ingredients for 28 pastries.

Ingredients
 5 Carrot
 2 red bell peppers
 1 button mushrooms
 500 peeled shrimp
 1 Onion
 Parsley
 Coriander
 3 cloves Garlic
 Salt
 Pepper
 Espelette pepper
 soy sauce
 ½ Mozzarella
 2 Flour
 a little water
 Oil

Cut the carrots and red peppers into julienne strips. Cut the onion and mushrooms into small cubes. Cut the mozzarella into slices. In a skillet, cook the carrots, peppers, and onion in a little oil over low heat. They should remain slightly crunchy. Add the diced mushrooms, minced garlic, and shrimp. Season with salt, pepper, crushed chili, parsley, and coriander. Add the soy sauce at the end and let it caramelize a bit.

Mix the flour with a little water to create a mixture that is not too liquid, which will be used to seal the cigars. Begin assembling the cigars (make sure to let the filling cool). Place a little filling at the bottom of the pastry sheet in the center. Add a piece of cheese. Fold the bottom part over the filling. Fold in the two sides. Roll the cigar tightly. Finish by sealing the end with the flour and water mixture.

To finish, place your cigars on a tray. Do not place them on the glued part. Cook them either by frying or in the oven (brush them with a little oil).
