A rustic tart, I love this shaping, with figs, honey, and goat cheese. A sweet-savory tart where the flavors blend wonderfully.

Ingredients
 150 Flour
 100 Whole wheat flour T150
 1 pinch Salt
 1 Egg yolk
 125 Cold butter
 5 water
 10 Figs
 1 Honey
 1 Goat cheese log
 Oregano
 Smoked ham

Shortcrust pastry

Pour the flour, salt, egg yolk, and butter cut into pieces into the bowl of your mixer fitted with the paddle attachment. Turn on your mixer to speed 2. Add the water in two or three stages, waiting a few seconds between each addition. A ball of dough will form. When it is ready, wrap it in plastic wrap and refrigerate for at least half an hour.

Preparation: Preheat your oven to 210°. Take the dough out of the refrigerator. Roll your dough directly on parchment paper to a thickness of about 3-4 mm, shaping it into an oval. Transfer directly to a baking sheet. Prick the dough with a fork.

To finish, slice the figs and goat cheese, alternating a slice of figs and a slice of goat cheese, ending with the cheese and spreading it in a rosette at the center of the dough. Drizzle with a fine stream of olive oil and a spoonful of honey. Sprinkle with oregano. Fold the dough over the edges and bake for 30 to 35 minutes. Add pieces of smoked ham at the end of the cooking time.
