For a spring aperitif, we try this recipe for zucchini flower fritters.
Separate the egg white from the yolk.
Mix the flour with the egg yolk and the olive oil in a mixing bowl.
Pour the milk, mix, then add the sparkling water. Season with salt and pepper. Mix again.
Whip the egg white and add it to the mixture.
Heat the beef fat to 180° in a skillet or deep fryer.
Dip the zucchini flowers into the mixture, drain well, and cook them three at a time for 5 minutes: they should be lightly golden.
Place them on a plate covered with paper towels.
To finish, sprinkle a bit of sea salt and enjoy immediately.
