A very pleasant and original preparation with strong and fresh flavors...
Peel the onion and garlic and slice them. Peel the piece of ginger and cut it into slices. Wash the zucchinis (keeping half of one), and cut them into cubes.
Heat half of the oil in a pot. Sauté the diced zucchini and ginger slices for a few minutes with a pinch of salt. Add the curry and cook over medium heat for 10 minutes. Then add the juice of half a lemon, and blend while gradually adding the remaining oil. Season with salt and pepper.
Cut the half zucchini into small dice, wash, dry, and chop the mint. Season this mixture with a drizzle of olive oil, salt, pepper, and lime juice.
To finish, serve this preparation on the caviar. Present with breadsticks or small toasts. ENJOY YOUR MEAL!
