Pick the watercress leaves, wash them in vinegar water, and dry them thoroughly.
Place half of the leaves in the steamer basket, add the salmon, and top with the remaining leaves.
Fill the pot with water up to level 3, then cook for 15 minutes.
To finish, collect the cooking water and place the ingredients in the blender. Blend while adding a little broth, until you achieve a smooth consistency.
