In a mixing bowl, pour in the flour, sugar, baking powder, and salt. Make a well in the center and add the beaten eggs and melted butter. Mix with a whisk, gradually adding whole goat's milk, and let the batter rest in the refrigerator for at least 30 minutes.
Place a mixing bowl in the freezer for 15 minutes. Then, pour in the very cold cream and the mascarpone, and whip until it forms soft peaks using a mixer. When the cream is almost whipped, add the packet of vanilla sugar and increase the speed.
Cook the waffles in a waffle maker, ideally round and non-stick, and then let cool slightly.
To finish, top the waffles with whipped cream, fresh fruit, and a few mint leaves.
