An original way to combine brioche with a waffle, here is my recipe for egg-free and butter-free brioche waffles.
Dissolve the yeast in a little warm milk. Let it rest for 5 minutes. Then add the remaining milk.
In the meantime, mix all the other ingredients in the bowl of the mixer.
Add the milk-yeast mixture gradually and knead for about 10 minutes.
Let rest for 1.5 hours at 30-35°C, covering with a damp cloth.
Degas and shape into pieces of about 60g. Optional and indulgent, you can roll them in a little pearl sugar.
To finish, cook in the waffle maker for 3 minutes and enjoy.
