A recipe for vegetarian burgers.

Ingredients
 1 small eggplant
 12 Candied cherry tomatoes
 1 Spring onion
 A few flat-leaf parsley leaves.
 Paprika
 Salt
 Pepper
 1 Olive oil

Cut the rolls in half and toast them. Keep them warm.

Slice the green onion.

Wash and dry the eggplant, then cut it into slices and brush them with olive oil.

Preheat the grill. Place the slices of eggplant on it and cook each side for 1 minute.

Salt and pepper to taste.

Sprinkle the warm rolls with paprika. Place on the base of the rolls a few leaves of parsley, a slice of eggplant, the sun-dried tomatoes, and a slice of cheese. Sprinkle everything with onion and dust with pepper and paprika.
