The leaves of turnips can be eaten raw or cooked. Here is a zero-waste, surprising, and delicious recipe for turnip leaf soup.
Wash and drain the turnip greens.
Peel and wash the potato. Cut it into 2 cm cubes.
Peel and slice the onion. Sauté it in a pot with olive oil.
Add the turnip leaves and wilt them for a few minutes.
Add the potatoes, the broth cube, and enough water to cover. Then cook over low heat for about 20 minutes.
To finish, blend. Add the fresh cream. Serve with bread croutons.
