Here is the recipe for the trio of asparagus, eggplant, and peppers, like a ratatouille, perfect for a healthy and light meal. This recipe made with white asparagus, green asparagus, eggplant, red pepper, honey, and chili is easy to prepare.
Peel the white asparagus, then cut them into pieces of about 1 cm. Set aside.
Cut the eggplants and bell peppers into 1 cm cubes.
Peel the garlic and finely slice it.
In a frying pan, heat the olive oil and sauté the asparagus, garlic, eggplants, and bell peppers with the thyme sprig and honey.
Salt and cook over low heat for 25 minutes.
To finish, at the end of the cooking, add the pepper and the spice. Serve on a sharing platter, with grilled meat or fish. Enjoy your meal!
