Peel and cut the potatoes into slices.
Cook the potatoes in salted boiling water for about 10 minutes, checking the doneness with a knife tip.
Peel and slice the onion into rings and sauté it in some butter. Pour in the white wine and stop cooking when the wine has evaporated.
Set aside the onions. Cook the bacon in butter and drain.
Pour some of the onions into a baking dish, followed by a layer of potatoes and a layer of bacon. Repeat this process several times.
Scrape the rind of the cheese to clean it a bit. Cut the cheese into 4 horizontally and place them on the bacon, rind side up.
Add a little pepper. Bake for 30 minutes at 180°C until the dish is nicely browned.
