An easy recipe that can be prepared in advance and reheats very well.
Dried beans The day before, soak the dried beans in a bowl of water. The next day, rinse and cook in a large volume of water (starting with cold water) for about an hour, adding salt at the end of cooking. Drain and set aside.
Onions In a pot, heat a little oil and sauté the onions until they are slightly browned.
Leek Add the sliced leek and let it gently soften.
Swiss chard Meanwhile, prepare the Swiss chard by cutting it into small pieces, including the leaves and stems. Add to the pot with salt, pepper, curry, and garlic. Cover and let simmer for about twenty minutes.
To finish, pour in the tomato sauce and the beans. Stir, check the seasoning, cover, and let simmer for about half an hour. Serve hot, possibly accompanied by rice or pasta.
