We love these summer fruit cups with whipped cream.
Chop one and a half apricots into small pieces and mix with 4 tablespoons of apricot jelly.
Mix half of the container of raspberries with 4 tablespoons of raspberry jelly.
Place the mixing bowl and the beaters in the freezer for 10 minutes before whipping the cream. Whip the cream for 3 minutes, add the sugar, and beat again for 5 to 7 minutes, until the cream thickens and is firm.
Separate the mixture into two. Whip one with a 1/2 teaspoon of apricot jelly and the other with a 1/2 teaspoon of raspberry jelly. Place each into a piping bag.
To finish, take 4 serving glasses and start layering with the mixed fruits combined with the jam, then pieces of meringue, flavored whipped cream, more fruits, whipped cream, and finish with fresh fruits and crushed pistachios.
