Preheat the oven to 180°C. Wash and cut the zucchini in half, then hollow out the center.
Finely chop the garlic and shallot, the parsley, and cut the flesh of the zucchini into small pieces, then add everything to the sausage meat, season and mix well. Fill the two halves of the zucchini.
To finish, place in an ovenproof dish, drizzle with olive oil, sprinkle with grated cheese (optional) and bake for about 50 minutes. Serve with couscous or rice.
