 50 Hazelnut
 60 Dried apricot
 3 Mint
 3 Parsley
 5 Coriander
 3 Dill

To start, in a dry skillet, place the hazelnuts and toast them over medium heat until their skin cracks.

Stir continuously for about 10 minutes. As soon as they brown and the nutty aroma spreads, remove them from the heat and place them on a clean cloth to cool.

Rub the hazelnuts in a cloth to remove the skin.

In a blender, place the dried apricots, mint leaves, parsley leaves, dill, and coriander, and blend roughly for the first time.

Add the hazelnuts and blend again coarsely.

Cut the cheese in half into two discs.

Top the cheese with the mixture using a spoon over its entire surface.

Seal the cheese and let it rest for at least 1 hour.
