A delicious spring recipe for potato cake with vegetables and ham.
In a pan, pour a few tablespoons of olive oil and sauté the vegetables, adding pepper and salt.
Boil the potatoes, peel them, and pass them through a potato masher. Put the mashed potatoes in a bowl and season with butter, eggs, grated ham, milk, salt, and pepper.
Cut the mozzarella into cubes and add it to the mixture. Slice the ham. Butter a baking dish and sprinkle it with breadcrumbs. Cover the bottom with half of the potato mixture and top with the vegetables and the ham.
To finish, spread the remaining mashed potatoes on top, add small knobs of butter, and sprinkle with a little grated cheese and breadcrumbs. Bake in the oven at 200° C for 30 minutes.
