Recipe for Split Pea Waffles

Yields11 ServingsPrep Time15 minsCook Time40 minsTotal Time55 mins

I had some leftover split pea puree, so I wanted to try making savory waffles. It turned out to be a success. I was pleasantly surprised because the taste of the split peas isn't really noticeable. My little girls enjoyed them.

Ingredients
 240 Split Pea Purée
 2 Plain yogurt
 1 Egg
 ¼ Salt
 ¼ Pepper
 6 Baking powder
 160 Flour
 60 Melted butter
 1 Chopped chives
Directions
1

In a large bowl, mix the split pea puree with the yogurt, egg, salt, and pepper.

2

Add the baking powder and flour and mix again to achieve a smooth dough.

3

Add the melted and cooled butter and mix again.

4

Finally, stir in the grated cheese and chopped chives. The batter is quite thick, like that of a cake.

5

Preheat the waffle maker. If necessary, brush it with a bit of oil the first time.

6

Place a tablespoon of batter for small waffles or more if you want larger waffles.

7

Cook until golden.

8

To finish, serve them as they are or accompanied by fresh white cheese or sour cream. You can find the detailed recipe on my blog, along with plenty of other delicious recipes.
