A blend of spring flavors, this salad of spinach leaves, strawberries, red onion, peas, and feta is a true delight.

Ingredients
 300 Shelled peas
 200 Strawberry
 160 Spinach shoots
 5 Lemon vinaigrette
 100 Feta
 Red onion
 Mint leaves
 Salt (optional)
 Pepper (optional)

Cook the peas for 5 minutes in a pot of boiling water, then plunge them into a bowl of ice water.

Wash and hull the strawberries, then cut them in half or into quarters depending on their size.

Wash and dry the spinach leaves. Peel and slice the red onion.

In a bowl, combine the peas, strawberries, and spinach leaves.

Add the lemon dressing. Gently mix. Divide the salad onto the plates.

Sprinkle everything with crumbled feta, sliced red onion, and chopped mint leaves. Season with salt and pepper if needed.
