Recipe for Sorrel Soup

A little tangy flavor that stimulates the taste buds and makes you forget the khaki color of this soup... The sorrel is delicious!

Ingredients
 200 Sorrel
 1 Water
 2 Onion
 20 Butter
 1 clove Garlic
 20 Sour cream
 Pepper
 Salt
 Freshly grated nutmeg
Directions

Thoroughly wash the sorrel and drain it, removing the stems to keep only the leaves. Slice the onion and garlic.

Melt 20 g of butter in a pot, sauté the sliced onions and garlic over low heat. Add the spinach and sorrel; wilt them over low heat, then add the broth. Cook for about 15 minutes.

Blend finely, add the cream (or the cream-milk mixture), pepper and salt to taste, a little grated nutmeg.

To finish, serve hot or chilled depending on the season.

    A delight thanks to the subtle blend with spinach!!! A creamy soup that stands out from traditional green vegetables. I will plant sorrel in my garden next year just for the pleasure of making this soup again.

    Finger-licking good Delicious soup that is definitely a must-make again. My 20-month-old daughter loved it so much because the acidity of the sorrel is very well balanced. My suggestion: I added potato to thicken it and I put the cream directly in the bowl (Russian style) so everyone can add as much as they want.

    Delicious Very easy to make, especially if you have sorrel in the garden. Even my children, who do not like green vegetables, ate it all.

    Acidity It is not very acidic because here we mix sorrel with spinach and add 200 ml of cream. All of this softens it quite a bit. However, it remains true that sorrel is, by nature, tangy!

    Good Very good, but a bit watery because I used frozen sorrel which released water. My suggestion: Serve with small cubes of fresh goat cheese that will refresh the soup and reduce its acidity.
