A delicious and wonderfully moist recipe made with fresh goat cheese.
Preheat the oven to 180°. Separate the whites from the yolks.
Mix the egg yolks with 80 g of sugar, lemon zest, flour, and fresh cheese.
In another bowl, beat the egg whites with the remaining 20 g of icing sugar until they hold stiff peaks.
Gently mix the two mixtures. Flour the mold and place the mixture inside.
Bake everything for 45 minutes. Wait for it to cool before unmolding.
To finish, for added indulgence, cut the cake in half and add fresh goat cheese.
