Today I suggest sautéed mushrooms with garlic and parsley. A delicious side dish or vegetarian meal. This is a very easy and quick recipe that is economical. The mixture of parsley and garlic adds a lot of flavor; it's really tasty and aromatic.
Clean the mushrooms with a brush without washing them. Cut them in half if they are medium-sized, leave them whole if they are small.
Heat a large skillet with 2 tablespoons of olive oil over high heat. Add the butter.
Once the butter is melted, add the mushrooms and mix well to coat them. Then let them cook until they are golden and all their water has completely evaporated (about 8 minutes in my case). Stir occasionally.
Once the mushrooms are golden, add 1 tablespoon of olive oil. Season with salt and pepper and add the minced garlic. Cook for 30-60 seconds, stirring.
To finish, turn off the heat and add the parsley. Mix and serve immediately.
