Seasonal dish always appreciated.
Clean the chanterelles by cutting off the tip of the stem and scraping the stalk. If they are dirty, wipe them with a damp paper towel.
In a sauté pan, melt a knob of butter. Add the mushrooms. Lower the heat and cover. They will release their moisture.
Once the water has evaporated, the chanterelles are almost cooked. Add salt, crushed garlic, and parsley to taste.
To finish, allow to cook until the chanterelles are tender.
