Clean the chanterelles by cutting off the tip of the stem and scraping the stalk. If they are dirty, wipe them with a damp paper towel.

In a sauté pan, melt a knob of butter. Add the mushrooms. Lower the heat and cover. They will release their moisture.

Once the water has evaporated, the chanterelles are almost cooked. Add salt, crushed garlic, and parsley to taste.

To finish, allow to cook until the chanterelles are tender.

    A bitter taste Easy to make, but I was disappointed because there was a bitter taste that I can't explain. If anyone has an idea why, please let me know, as the mushrooms are expensive and I wasn't fully satisfied.

    Chanterelles The recipe is excellent except for a small detail, in my opinion: garlic should be avoided for this type of mushroom as it can overpower its flavor.

    Success! The chanterelles... still so good! My suggestion: To avoid the release of water that can make the chanterelles rubbery, you can blanch them for 1 minute in boiling salted water before sautéing.
