Preheat the oven to 170°C and place the flat mold on a perforated baking sheet.
Peel the potatoes and then cut them into julienne using a mandoline.
In a mixing bowl, whisk together the eggs, onion, chili powder, cheese, and salt. Add the potatoes. Distribute the mixture into a flat baking dish. Bake for 30 minutes at 170°C.
Cut the cheese into thin slices.
As soon as they come out of the oven, place a baking mat and a perforated tray on the potatoes. Turn them over and then unmold. Spread the cheese on the surface, followed by the ham.
Roll everything up and then wrap the roll in a baking cloth or plastic wrap, tightening it slightly. Let it rest for 5 minutes to allow the cheese to melt.
Finally, slice and serve with a green salad.
