Cut the chicken breasts in half lengthwise.
Place each cutlet between two sheets of plastic wrap and flatten with a rolling pin, seasoning each piece with salt and pepper on both sides. Cut slices of blue cheese and cover the four cutlets with them, then add the boneless ham.
Roll the chicken inward widthwise and wrap it tightly in plastic wrap, then tie the ends. Place in the freezer for 1 hour.
Heat the fryer, or alternatively, a pan with vegetable oil. Beat the eggs, and season with salt and pepper.
Blend the crispbread to make breadcrumbs.
Unpack the chicken cutlets and roll them in flour, then in beaten egg, and finally in breadcrumbs.
Using two forks, lower into the fryer and let fry for about 6 to 7 minutes.
To finish, remove from the fryer and let drain for a few minutes on a rack, then serve with green vegetables.
