Roasted peach, tomato, and cured ham salad, nothing better to refresh yourself deliciously during this particularly hot summer period when you really don’t want to turn on the oven.

 8 Serrano Ham
 2 Organic yellow peach
 1 Black Crimean Tomato
 10 Red cherry tomato
 10 Yellow cherry tomato
 3 Basil
 10 Butter
 1 sugar
 2 Olive oil
 Parmesan

Wash the peaches and remove the pit. You can peel them if you wish; I didn't do it (organic peaches). Cut them into wedges. Lightly brown the peach wedges in a pan with butter and sugar. Cut the cherry tomatoes in half.

Prepare the pesto sauce. In a bowl, mix the tablespoon of pesto with the olive oil. Set aside.

Finally, arrange your chopped tomatoes and the roasted peach slices in a small bowl or a shallow dish. Add the torn slices of ham. Garnish with basil leaves and shavings of Parmesan. Serve with pesto sauce and enjoy.
