I propose a very simple recipe: a red currant sorbet! A fruit that I really enjoy for its slightly tangy and refreshing taste. A delight in sorbet form! On a hot summer day, nothing is better than enjoying a delicious homemade red currant sorbet. This simple and quick recipe will allow you to create a flavorful frozen dessert, with or without an ice cream maker. You can make it with an ice cream maker or without it... in that case, you will get more of a granita.

Rinse the currants and remove the stems. Mix the sugar and water in a saucepan and bring to a boil. Once the sugar is dissolved, add the currants and let cook over medium heat for 3 to 4 minutes, stirring.
Let it cool slightly and blend everything with an immersion blender or in a blender. Strain the mixture using a fine sieve, pressing down with the back of a spoon to extract as much juice as possible. Allow to cool, pour the mixture into the ice cream maker and churn until the desired consistency is achieved...
If you do not have an ice cream maker, pour the mixture into a relatively wide dish and place it in the freezer... scrape with a fork every 30 minutes until you obtain a slushy texture (count about 2 hours).
To finish, serve immediately in bowls that have been previously placed in the freezer... or to save time at serving, prepare the bowls with the sorbet and place them in the freezer... ideal when it's very hot... it will melt more slowly! Decorate with clusters of currants and mint leaves...
