For an original fruity dessert, try these puff pastry roses with apples. Easy to make, they will make a great impression on your table!

Ingredients
 6 Ruby Gold apples
 1 Lemon juice
 78 Water
 90 Sugar
 138 Raspberry

Preheat your oven to 180°C.

Cut the apples in half, remove the core, then slice thinly using a sharp knife. Place them gradually in lemon water to prevent browning.

In a saucepan, bring the water to a boil with the sugar and raspberries. Strain, then gently dip the apple slices into the boiling syrup for 3 minutes to soften them. Drain, then let cool.

Cut the puff pastry into 6 strips and coat with a thin layer of compote.

Place the apple slices on the upper half of the strip, rounded side up, allowing them to extend beyond the dough and overlap. Fold the lower part of the dough over the apples.

Gently roll the strip onto itself, then place the rose in a buttered muffin tin. Repeat.

To finish, bake for about 30 minutes.
