 2 Beef Tenderloin
 4 Starchy potato
 50 Grated Emmental cheese
 2 Egg
 5 Flour
 6 Breadcrumbs
 100 Ground beef
 5 Onion
 15 Tomato sauce
 Olive oil

Peel the potatoes, cut them into large cubes, and cook them for 20 minutes in salted boiling water. Drain and mash. Stir in the grated cheese. Season with salt and pepper.

Heat the olive oil in a pan, sauté the chopped onion, and add the ground beef. Cook for 5 minutes and add the tomato puree. Season with salt and pepper, then continue cooking on low heat for 20 minutes. Allow to cool.

Take a ball of mashed potatoes, form a hollow, and place a teaspoon of meat sauce in it. Close it up and place it on a floured plate. Repeat the process until you have 12 balls. Refrigerate for 1 hour.

Pour the flour into a deep plate. Beat the eggs in a second plate. Pour the breadcrumbs into a third plate. Coat the balls in the flour, then the egg, and finally the breadcrumbs.

To finish, heat the Beef White in a deep fryer at 170°. Immerse the croquettes for 10 minutes. Drain on paper towels and serve with a green salad.
