A pie with a good homemade crust and beautiful ripe plums full of juice... It's delicious!
Prepare the dough. In a mixing bowl, combine the flour, almond powder, and powdered vanilla. Add the softened butter cut into cubes and mix with your fingertips. "Sandy" the dough as if making a crumble: you will obtain crumbs of dough. Add 2 or 3 tablespoons of cold water, mix, and knead the dough for a few minutes. Form a ball, wrap it in plastic wrap, and refrigerate.
Wash the plums, cut them in half, and remove the pits. Place them in a mixing bowl and sprinkle with cane sugar. Set aside in the refrigerator. Preheat the oven to 200°C (390°F).
Roll out the dough on a floured surface. Butter a tart pan and press the dough into it, gently pressing on the edges. Sprinkle the bottom of the tart with the two tablespoons of almond flour (it will absorb the excess juice released by the fruits and help keep the crust nice and crispy).
Arrange the halves of the plums harmoniously on the dough, starting from the edges toward the center and packing them closely. Drizzle with 2 tablespoons of honey. Bake for about 40 minutes, depending on the oven. The plums should be golden brown, and the bottom of the tart should be well cooked.
Let cool on a wire rack and enjoy warm or cold. Sprinkle with crushed spiced cookies (using a rolling pin or a blender).
