Recipe for Pistachio and Apricot Cookies

Ingredients
 120 Semi-whole flour
 150 applesauce or apple-apricot without added sugar
 2 Apricot
 1 Pistachio
 1 pistachio paste
 1 Fat-free white cheese

Preheat the oven to 180 °C (340 °F).

In a bowl, mix the flour, yogurt, pistachio paste, and applesauce, then knead with your hands until a ball forms. Refrigerate for 30 minutes.

Form 10 dough balls with your hands, then flatten them with your palm. Place them on a sheet of parchment paper.

Place a few pieces of apricot and some crushed pistachios on each cookie and bake for 10 minutes.

Let them cool. They will harden on the outside and remain soft on the inside.
